Egg Salad Sandwich
Ingredients:
4 hard boiled eggs-peeled, sliced & chopped
1 stalk celery-thinly sliced and chopped
3 green onions-chopped
1/4 cup shredded cheese
1 tbsp. chopped black olive
Bread
Tomato slices
Sprouts
Dressing:
1 tbsp. mayonnaise
1 tsp. mustard
1/4-1/2 tsp. chili paste(hot)
2 pinches paprika
1 pinch parsley
salt & pepper to taste
Mix eggs & vegetables in a small bowl. Adjust ingredient amounts if necessary to make an even mix.
Add dressing ingredients sparingly one at a time and mix. Add salt & pepper if desired to adjust flavour.
Refrigerate if not serving right away.
Add sliced tomatoes and sprouts to one side of the sandwich. Add egg salad mix and cover with other slice of bread.
